Up to the early 1980′s Anthony was involved in the wine business, in vineyards and wineries from Alsace to Australia. In 1984, he started helping his father with his smoked salmon business. Soon he could see a greater potential in smoking salmon than selling wine! In 1988 Ummera Smoked Products Ltd. was created. In May 1998, Anthony Creswell took over the running of the Company from his father. The smoking was transferred in October 2000 to a new custom built smokehouse. This has enabled Ummera to move into the 21st century with the confidence that the quality of its products will be second to none. In 2002, Ummera was awarded the Organic Trust symbol for sourcing, processing and distribution of Certified Organic Smoked Salmon. One of West Cork’s first businesses to sell his products online, Anthony has also been one of the first in Ireland to use Twitter to promote his brand, selling to customers as far away as Hawaii through the medium.

Colette Twomey – www.clonakiltyblackpudding.iewww.facebook.com/ClonakiltyBlackpudding

colette twomey clonakilty black puddingAfter their marriage in 1977, Colette and Edward Twomey bought and operated a butcher shop in Clonakilty town. Included with the deeds of the butcher shop was the recipe to make blackpudding. In the early years of the business Colette set off with a van of produce, through the towns and villages of Cork, meeting with shopkeepers and expanding the customer base as she went. Most of the marketing took place at agricultural shows locally and nationally, at Bord Bia tastings and at many community events nationwide. The business expanded significantly after 1980 when Colette attended the Department of Food Sciences at UCC. It was then the recipe for Clonakilty whitepudding was developed. This proved to be a significant turning point for the company. The increase in ranges of products brought about the need for bigger premises. The production plant was relocated incorporating access to ports for the expanding export markets. Colette as owner and managing director employs forty-two members of staff, in production, sales and administration, with an average €1million payout in wages per annum. In November 2005, Edward Twomey passed away; he had lived to experience the success of the Clonakilty Food Co.

In February of this year, Clonakilty Blackpudding organised “Clonakilty by Candlelight” – six “flash” restaurants featuring Clonakilty Food Co products and other produce from the Clonakilty area. The evenings were held in a secret location in Dublin were promoted mainly through Social Media. Word spread quickly from Facebook user to Facebook user and throughout Twitter, and the event was a huge success
